Chocolate Chip Cookies

Classic chocolate chip cookies are my favorite. I love them just a little crispy on the outside and gooey on the inside.

I get that sometimes when you try to "healthify" a classic cookie recipe sometimes it can turn out to be more like a muffin top then a cookie texture. I PROMISE these are NOT that. If you use all the ingredients I list and do not make any substitutions, you will get your crispy and gooey chocolate chip cookies. I love this recipe because it uses very few ingredients, one bowl, and is ready in about 15-20 min (if you count the cooling time). So dig in, and comment below and let me know how you enjoy them!

Ingredients:
  • 1/2 cup Vegan Butter ( I use earth balance)
  • 3/4 cup coconut sugar
  • 1 egg
  • 2 tsp vanilla
  • 2 1/2 cup Almond Flour
  • 1/2 tsp baking soda
  • Chocolate Chips (I use enjoy life mini chips or chunks)
  • Options: Sprinkle sea salt on top (which I highly recommend)
Instructions:

1.) Preheat Oven to 350. Line a baking sheet with parchment paper
2.) Mix all dry ingredients in a bowl, add the wet ingredients and mix well.
3.)Fold in Chocolate Chips
4.) scoop two tablespoons to form cookies (batter should make 10 large cookies or 15 med sized). Sprinkle with sea salt.
5.) Bake for 11-12 min (or until golden brown). Let them cool for about 5-10min before removing .
