I LOVE bagels, and this bagel recipe is SO EASY! Takes about 15 or so minutes to whip up, and uses minimal ingredients by getting some help from the Simple Mills Artisan Bread mix, found here and Bobs Red Mill Egg Replacer found here. Both mixes are super clean, no added junk or chemicals! I added a few additional ingredients for some taste, like Violife vegan parm cheese and of course Trader Joes everything but the bagel seasoning. (I can put that stuff on everything). Violife can be found at most whole foods, or you can sub real parm (if not vegan).
Making an egg using Bobs Red Mill mix is super easy. All you need for 1 egg is 1 tbsp of mix and two tbsp of water. Then you whisk it up and let it sit to thicken. Since this recipe calls for two eggs, you will just double it to two tbsp mix and 4 tbsp of water. On the Simple Mills box you will follow the instructions for the dinner rolls recipe minus the eggs since you are using the egg replacer. I use these silicon donut pans from amazon pictured below and love them! Really easy to clean too!:

Vegan Bagels Recipe
Ingredients:
1 package of Simple Mills Artisan Bread Mix (+1.2 cup water,2 tbsp olive oil, 1/4 cup apple cidar vinegar) 2 "eggs" using Bobs Redmill Egg replacer 1/4 cup Vegan Parm (I used Violife ) Everything But the Bagel Seasoning Directions: 1.) Preheat Oven to 350 degrees and spray donut tins with non stick spray(makes 12) and set aside. 2.) Mix 2 tbs bob reds mill egg replacer with 4 tbsp water in a small bowl and whisk well and let sit for 1 minute until it thickens to an egg texture. 3.) in a separate bowl mix the simple mills artisan bread mix with water, olive oil, and apple cider vinegar. Add in the egg mixture and mix well. 4.) fold in the parm cheese and a few sprinkles of everything but the bagel seasoning. 6.) add the mixture to the donut tins, and then spray the tops with cooking spray, and sprinkle everything seasoning on top. 7.) I like to press the seasoning down with my finger so they dont all come off after baking 8.) Bake for 25min, and let them cool before removing. 9.)
