Copy Cat Erewhonmarket Paleo Bread

I never thought there would come a day where I would be making my own bread, BUT here I am baking my own version of the famous California supermarket Erewhonmarket's paleo bread.

I have never actually been to this market, but I am always watching other foodies instagram stories and this bread is SOOO popular, and also SOO expensive. Almost seems too expensive for the amount you are getting, but people buy it because it is that good!

I have to thank @Shuangy_kitchensink for posting to her story after a trip to Expowest the actual ingredients listed on the bread. Immediately I took a screen shot, and went to town in the kitchen trying to re-create this recipe. Since I havent tried the bread from the actual market I cant honestly say it tastes the same, but the ingredients are identical and my version is pretty damn good! (Literally do not even need to add anything on top, its that GOOD)



Copy Cat Erewhonmarket Paleo Bread

Ingredients:
1 1/2 cups Almond Flour
1/4 Cup flax meal
3 tbsp coconut flour
1 tsp baking soda
sprinkle of sea salt
5 eggs
1/4 cup coconut oil (soft but not melted)
1 tbsp manuka honey
1 tsp apple cinder vinegar

Directions:
1.) Preheat oven to 350F. Add parchment paper to a bread baking dish and spray with cooking spray (set aside)
2.) Add dry ingredients to a small bowl and mix well.
3.) in a blender or with a hand mixer add solid coconut oil and eggs on medium speed and mix well. (can use just a fork instead but easier to use hand mixer to make sure ingredients are well combined)
4.) Add remaining wet ingredients in wet mixture and blend until smooth
5.) Add in dry ingredients and mix until items combine (dont over mix) If some powder is left on the side just scrape down with a spatula.
6.) Pour into baking tin and bake for 35 minutes (makes about 8/10 slices)
