in The weekends to me scream pancakes and waffles. Nothing like a nice fluffy stack of pancakes on a Sunday morning. Normally I will make these protein pancakes in dollar size and stack them up, but this weekend I just wanted one giant pancakes with all the toppings. Protein pancakes are super easy to make, and you can even prep them on the weekends, freeze them and then pop them in the toaster to reheat them during the week for an easy quick breakfast. These pancakes have only a few ingredients: Protein powder (I use Tone it Up), egg whites, baking soda, vital proteins, and sun butter. Just need to add all the ingredients to a bowl and mix well. I also decided to add a dash, (well a few dashes) of cinnamon last minute. The pancakes cook up pretty fast, but its important to not flip them too soon. I like to spray the pan first with non stick cooking spray and let it heat up a bit on med-high. Then I pour my batter in and wait for the center to bubble before flipping. I decided to drop in some strawberries, but you can totally eat these as is, or add anything else of your choice...chocolate chips are never a bad idea.... After its flipped, it will probably need another 3-5 minutes until fully cooked. Then you are ready to plate it up and add all the toppings your heart desires. I topped mine with a Sun Butter drizzle, which is done easily by just dipping a spoon into the container and then you can just drip it slowly on top of the pancake. I also added a few chocolate chips ( I always use Enjoy Life). and some Purely Elizabeth grain free granola. I enjoyed every last bite! May or may not have licked the plate after, but whos judging .....
Ingredients: 1 Scoop Tone it up Protein 1 Scoop Vital Proteins powder 1 tsp baking soda 1 tbsp sun butter 1/4 cup egg whites Instructions: 1.) Mix all ingredients together in a bowl 2.) add a dash of cinnamon if desired 3.) fold in topping (options) 4.) spray pan with non stick cooking spray and heat on med-high heat for 1 min so pan gets hot 5.) pour in batter and cook until center starts to bubble 6.) I absolutely love pasta. It was about the only food group I ate while growing up, with ketchup, (I know that might sound gross to some) but I loved it, I still probably do, but haven’t had it for as long as I can remember now. Carbs from the pasta + Sugar from the ketchup is just not going to cut it for me anymore in terms of a well-balanced meal.
I know some of you have more expansive pallets then I do so when it comes to eating pasta dishes whether out at a restaurant, or at home, when we are trying to watch our waistline this is the one food group (and yes I am putting pasta in a food group) that I hear from my clients and friends that they are missing out on the most. Lucky for us, there are sooooo many pasta alternatives out there that can still have you feeling good about keeping your health in check. Of course none of these taste EXACTLY like the real deal, however, they do satisfy that noodle craving. Reviewing some of my favorites below and including the dishes I like to use with them. Shiritake Noodles
If you check my Instagram feed you will see that I use these for most of my dishes. They take on whatever flavor you season your dish with. Before cooking they need to be drained, rinsed and patted dry to remove the odor. I use them for mock lo meins, ramen noodles, and for stir frys.

Palmini Pasta
This pasta is fairly new to market and is probably my new favorite. Palmini pasta is made from hearts of palm, and just like the noodles above before cooking with them you need to drain and rinse them. I even like to soak these for 10-15 minutes in some almond milk and then rinse again for a better consistency and taste.
This pasta is more dense in texture so normally I will make it with a creamier sauce. Alfredo, Cheesey, vodka sauce, are all good options. Check out my Cheesey Low Carb Pasta for a recipe!
VEGETABLE Spirals
By now spiralized vegetables are pretty main stream. I have even seen zucchini noodles available on some restaurant menus! (Which makes me so happy). You can even buy pre spiralized veggies in most grocery stores in both the prepared foods and frozen foods section. My spiralizer is pictured below from amazon and is under $25 and does the trick! It also comes with different inserts so you can change the shape of the noodles.
Brown Rice Pasta/Lentil Pasta
Brown rice pasta and lentil pasta are other popular pasta alternatives. There are so many brands out there it can be tricky to decide which ones to buy. I think its import here to check the ingredient list and make sure its not a long list of things. It should only have one or two items listed. For instance, Ancient Harvest makes a red lentil pasta and the ingredient list is organic quinoa flour and red lentil flour. Tolerent Pasta makes a red lentil pasta that is just red lentil flour. I get it, sometimes the extra funds arent there for those fancy gym memberships and boutique fitness classes. However that is no excuse not to be able to get a workout in. There are a TON and I mean a TON of free workout content out there. Even some of the top fitness trainers share content for free! I love heading to my fitness classes and the gym, but sometimes theres just not enough time in the day for me so finding good home workouts are SO important. I wanted to share some of my favorites with you since I know the online world is so HUGE its hard to narrow down which ones are worth the time. Picking a workout video is like scrolling through Netflix with no game plan...you spend more time searching then you do actually watching. 1.) Megan Roup + The Sculpt Society Ever wonder what the Victoria Secret models do to get ready for the VS fashion show? They hire Megan Roup! Megans classes are low impact sculpt and a bit of dance cardio (easy to follow moves, think jumping jacks and grapevines). I have had the privilege of taking her in person in NYC but her video workouts are just as good! If you head to her website she also offers a few free workout videos. Her routines are so fun, I can do the same one over and over and never get sick of it! By repeating the same one you actually can also measure how much stronger you are getting! Click here for her free workouts! 2.) The Fitness Marshall Its amazing to me that Caleb "The Fitness Marshall" YouTube workouts are ALL free. After a long day of work I can put on one of his sweat sets and instantly my mood is lifted. Even though his workouts are choreography focused he has an energy that allows you to have fun with it and not focus on perfection. The sweat sets are usually about 45min long, and are split into 3-5min follow along dance videos. You also have the option to just pick videos at random on his YouTube channel. This is also such a fun workout to take along with you on a girls trip! On my bachelorette party weekend I had all my friends doing it! Its a BLAST! 3.) Pop Sugar Fitness Channel Who needs a gym membership when this channel offers over 1,000 free workout videos in their library! Most of the videos also need little to no equipment! I love how energetic the trainers are and how the workouts are grouped in terms of body part and time. If you are in a rush in the morning and need something quick you can pop on a quick 10min ab routine before heading out the door! Some of my favorite workouts are the ones with Anna Renderer. Link to their YouTube channel here 4.) Tone It Up If you are into fitness its hard not to know the Tone it Up girls Karen dawn and Katrina Scott. They have a workout app, and a nutrition program, but did you also know a lot of their content is free on their YouTube channel? They have a ton of videos from their past workout programs and most are filmed on the beach which is always nice to look at while you work out ;). I love their energy and their bubbly personalities. They make working out fun and dont take things too seriously. You are still getting in a great workout while having a good time. Link to their YouTube channel here. 5.) Yoga with Adriene As I have said in previous posts, I have struggled with anxiety for as long as I can remember. Yoga has helped me tremendously calm my mind and help me manage my anxious thoughts. Yoga is a great workout for the body to stretch and create those long lean muscles. It is also a great workout for the mind. Always challenging you to new poses and to focus on your breathe and get out of your head. Adrienes YouTube channel is free and her videos are awesome. Her voice is just so soothing that her videos instantly relax me. Additionally, you might get an appearance from her dog Benji in her videos which I love! (even her dog is SUPER zen). She has a ton of monthly challenges and lots of yoga for beginners. Can give her a shot here. Whatever workout you choose to do, theres never a bad choice. By trying out different videos you can learn what style workouts are right for you. Once you find some workouts you enjoy doing, It will keep you coming back for more!
