Why is it that the fewer the ingredients in packaged goods, and the more clean they are the more expensive!? Clean crackers can range anywhere from $6-$12 a box! This weekend I decided to make my own crackers using just two ingredients....Yup two ingredients! (Well three if you count water as an ingredient) Now dont freak out when you read the directions to make these, It will sound a lot more complicated than it actually is. There are a few steps to get the crispiness factor right, but its not complicated. Just take it one step at a time! I buy ground flax meal at Trader Joes, but make sure you buy the flax seed already grounded, dont attempt to use whole pieces. Bobs Red Mill is also a great brand I love for flax meal and you can find it on Amazon by clicking here. All It takes is two cups of flax and 1 cup of water to form the dough, Then you can season it with whatever you want! I used my favorite Braggs 21 seasoning which is listed on my favorite products page. Everything but the bagel seasoning, or adding in some seeds to the batter is also a great choice! Once you mix the flax with the water, and add your seasoning, you can keep mixing until a dough is formed When you line your sheet with parchment paper you are going to want to spray it with some non- stick spray and then roll the dough out by placing another parchment paper on top. Make sure to spray both parchment papers with non-stick spray for rolling the dough out. Once the dough is all rolled out you can then score the dough into crackers. Make them as thick or thin as you would like they will not change shape when baking since there is no baking soda or powder in this recipe.
I cant wait to try some other ideas for making my own crackers! I am thinking something sweet or cheesy next! Ingredients: 2 cups flax-meal 1 Cup water Desired Seasoning Directions 1.) Preheat the oven to 400 F. Place one sheet of parchment paper on a baking sheet and spray with non-stick spray. Take another piece of parchment paper (the same size) and spray with non-stick spray and set aside. 2.) Mix flax meal with water and desired seasoning for cracker. Mix well so seasoning is incorporated. 2.) place the dough on top of parchment paper on backing sheet, and add the other sheet set aside on top (sprayed side down). 3.) Roll out the dough or just press on the parchment paper until the dough has flattened out. I would try to make the dough super thin so it crisps easier. 4.) remove the top sheet of parchment paper and set aside you will need it later. 5.) Score the dough with lines to make square cracker shapes (be careful not to cut through the paper) 6.) Sprinkle seasoning on top and press down. 7.) Bake for 15 minutes. Then remove from the oven and place the sheet of parchment paper on top. Take another baking sheet and place on top of that, and flip the sheet over so now the other side of the crackers are facing up. 8.) remove the top sheet of parchment paper (some might stick which is okay). Add back into the oven for 15 minutes. 9.) remove pan from the oven and break apart the squares to place on the other baking sheet (make sure to spray it first) Bake the separated squares for 25-30 minutes. 10.) Let the crackers cool completely before eating. If you have some left over...(recipe should make about 45-55 crackers) You can store them in an airtight container and leave out for 5-7 days. You can also store these in the fridge and then pop them in the toaster oven to crisp up if you want to save for a later time. Let me know if you re-make these, and what flavor combos you choose! I LOVE bagels, and this bagel recipe is SO EASY! Takes about 15 or so minutes to whip up, and uses minimal ingredients by getting some help from the Simple Mills Artisan Bread mix, found here and Bobs Red Mill Egg Replacer found here. Both mixes are super clean, no added junk or chemicals! I added a few additional ingredients for some taste, like Violife vegan parm cheese and of course Trader Joes everything but the bagel seasoning. (I can put that stuff on everything). Violife can be found at most whole foods, or you can sub real parm (if not vegan).
Making an egg using Bobs Red Mill mix is super easy. All you need for 1 egg is 1 tbsp of mix and two tbsp of water. Then you whisk it up and let it sit to thicken. Since this recipe calls for two eggs, you will just double it to two tbsp mix and 4 tbsp of water. On the Simple Mills box you will follow the instructions for the dinner rolls recipe minus the eggs since you are using the egg replacer. I use these silicon donut pans from amazon pictured below and love them! Really easy to clean too!:

Vegan Bagels Recipe
Ingredients:
1 package of Simple Mills Artisan Bread Mix (+1.2 cup water,2 tbsp olive oil, 1/4 cup apple cidar vinegar) 2 "eggs" using Bobs Redmill Egg replacer 1/4 cup Vegan Parm (I used Violife ) Everything But the Bagel Seasoning Directions: 1.) Preheat Oven to 350 degrees and spray donut tins with non stick spray(makes 12) and set aside. 2.) Mix 2 tbs bob reds mill egg replacer with 4 tbsp water in a small bowl and whisk well and let sit for 1 minute until it thickens to an egg texture. 3.) in a separate bowl mix the simple mills artisan bread mix with water, olive oil, and apple cider vinegar. Add in the egg mixture and mix well. 4.) fold in the parm cheese and a few sprinkles of everything but the bagel seasoning. 6.) add the mixture to the donut tins, and then spray the tops with cooking spray, and sprinkle everything seasoning on top. 7.) I like to press the seasoning down with my finger so they dont all come off after baking 8.) Bake for 25min, and let them cool before removing. 9.) If eating right away slice and serve, otherwise freeze them not sliced. I would never eat cookie crisp again knowing what sort of chemicals are in there so, enter my motto, "crave it, create it." These are not as small as cookie crisp cereal but I imagine If I used smaller portions to make the cookies it would be a bit closer to the overall look of a cookie crisp cereal. You still can pour these mini cookies into a bowl, and drench them in the milk of your choice, or just eat them plain as a yummy snack! I also intentionally did not set out to make a keto recipe but if you do practice a keto diet they are keto friendly, along with dairy free, and gluten free! I think my favorite part about making this recipe was hammering the chocolate chips to make them smaller for the cookies. You do not want to use regular sized chocolate chips because it will give the cookie a gooey texture and I am going for so major crisp factor here. If you need to get out any aggression this recipe is for you, hammer away! I apologize for making you go out to grab a specialty nut butter but this stuff is so good. I Imagine the cookies would still work if you replaced the artisina organics butter with an almond butter, but I havent tried it yet so if they dont come out right, dont blame me! I bought this at thrive market, and its about $8 a jar. Once the batter is all mixed I usually scoop the batter into a plastic bag and then cut a whole in the corner of the bag to easily squeeze out a small portion of the batter. I recommend even making them a tad smaller since they expanded a bit in the oven, if you want them to take on the cereal look. If you are into the mini cookies, then pictured below is measuring about two teaspoons. This batter made roughly 50-55 mini cookies. Such a fun snack and also highly recommend dipping them in your favorite milk or even some peanut butter! Ingredients
1 Cup Almond Flour 1/2 Cup Flax Meal 1 tsp baking soda 1/4 cup monk fruit sweetener (If you dont mind it not being keto can sub sugar of your choice here) 3 tbsp coconut oil (melted) 1/2 cup artisina cacao bliss butter 2 eggs 1 tsp vanilla 1/3 cup chocolate chips (mashed into pieces) Directions 1.) Preheat Oven to 350 Degrees. Spray a cookie tray with non stick spray, set aside 2.) Add all wet ingredients into a med size bowl, mix well. 3.) Mix all dry ingredients into a separate bowl. 4.) add dry to wet ingredients and mix well. 5.) Fold in chocolate pieces. 6.) Add batter into a plastic bag and cut the corner. Squeeze small portions onto cookie sheet (about 1-2tsp) The batter should make about 50-55 cookies. 7.) Bake for 10-15min (oven times may vary) 8.) let cookies cool completely before eating.
