I love me some crunchy granola, but the cleaner the granola is, the more expensive! The granolas that are cheapies tend to have a whole load of crapola in them. Granola is one of the easiest things to bake on your own. It requires very little time, and once done you can store it in a jar on the counter for up to a week! (hello healthy cereals, and snacking). This granola will have your kitchen smelling AMAZING. (My neighbor even reached out to me asking if I was baking because our hallways smelt incredible. (So if anything whip some of this up before you have people over and have your place smelling like professional bakery). With all the right ingredients these are entirely gluten-free, refined sugar-free, and plant-based. If you want the recipe a little sweeter can add in some coconut sugar or extra maple syrup. For thick granola chunks make sure to keep some of the granola pressed together but dont just leave it all in a pile. Need to make sure it bakes evenly. Throwing in the coconut last for 5 minutes was a money move. Toasted it just enough without over cooking. Lets get to the recipe!
Ingredients:
Directions: 1.) Preheat oven to 350. line a baking sheet with parchment paper (do not spray) 2.) In a med bowl mix dry ingredients (dont add coconut flakes yet). 3.) add wet ingredients to dry and mix well. 4.) Transfer mixture to baking sheet and bake for 15min. 5.) Take out of oven and mix in coconut flakes 6.) put back in the oven for 5 minutes 7.) Let the granola cool for 10min so some of the pieces dry and clump together for crunchier granola. Enjoy!
